Lemon Poppy Seed Slices



Ingredients
3/4 cup butter, softened
1 cup sugar
1 large egg, room temperature
1 tablespoon 2% milk
2 teaspoons finely grated lemon zest
1/2 teaspoon vanilla extract
1/2 teaspoon lemon extract, optional
2-1/2 cups all-purpose flour
1/4 cup unwashed poppy seeds
Directions
- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg, milk, lemon zest and extracts. Gradually add flour and mix well. Stir in unwashed poppy seeds. Shape into two 8-in. rolls; wrap each roll in waxed paper. Refrigerate 3 hours or until firm.
- Preheat oven to 350°. Unwrap and cut into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake 10-12 minutes or until edges are golden. Cool 2 minutes before removing to wire racks to cool completely
